What it is

Indrayani is one of Maharashtra's everyday rices, bred from Ambemohar parentage. It's a medium grain that cooks soft and slightly sticky, with a mild aroma. That makes it the usual choice for varan-bhaat, khichdi, masale bhaat and curd rice. It's not built for long, separate biryani grains. Our Indrayani rice guide explains more.

How to cook it

Rinse two or three times, soak for 15–20 minutes if you like, and cook with about 1 cup of rice to 2 cups of water. Add a little more water for a softer khichdi.

Storage

Store in an airtight container in a cool, dry place, away from moisture.
