How to use
Mix a cup of the flour with one finely chopped onion, chopped coriander, a green chilli or two and salt. Add water a little at a time until the dough is soft and slightly sticky. Pat a ball of dough into a round on a greased tawa, poke four or five holes and add a few drops of oil to each, then cook covered on medium heat until the underside is crisp. Flip and finish the other side. Serve hot with white butter, dahi or pickle.
Storage
Move the flour into an airtight jar once opened, keep it in a cool, dry place away from the stove, and use it within a few weeks.
