What it is

Brown rice is ordinary rice with the bran layer left on, rather than a separate variety. That gives it its colour, a nutty taste and a firmer, chewier bite than white rice. It suits dal, usal and amti better than curd rice.

How to cook it

Rinse it and soak for 30–60 minutes. Cook with about 1 cup of rice to 2½–3 cups of water until tender; in a pressure cooker, allow a couple of extra whistles compared with white rice.

Storage

Because the bran is left on, brown rice keeps for a shorter time than white rice once opened. Store in an airtight container in a cool, dry place and finish it within a couple of months.
