    What to use it for

    Mustard oil is the traditional oil for many lonche (pickles) and for tadka where you want its sharp, pungent flavour. If raw mustard oil tastes too strong for you, heat it until it just begins to smoke, let it cool, and then use it — this softens the bite.

    What to expect

    Wood-pressed (lakdi ghana) oil is filtered rather than refined, so a little sediment at the bottom of the bottle and a stronger aroma than supermarket oil are normal.

    Pack size

    This oil is sold by weight. Oil is lighter than water, so 100 g is roughly 110 ml.

    Storage

    Keep the cap tight and store away from sunlight and the heat of the stove. A small pack is handy for trying the oil or for a single batch of pickle.
