What it is
Ghansal is the fragrant rice of Ajara taluka in Kolhapur district. "Ghan" means fragrance, and that's what the rice is known for. The grains are short, bold and creamy-white, and they cook firm and tender rather than sticky. Ajara Ghansal has been a registered Geographical Indication (GI) since 2016. How to cook it
Rinse two or three times and soak for 15–20 minutes. Start with about 1 cup of rice to 2 cups of water and adjust to how soft you like it. In Kolhapur homes it's the rice for festivals and special meals: plain rice with ghee and varan, or masale bhaat.
Storage
Store in an airtight container in a cool, dry place, away from moisture.
