What to use it for

The classic oil for pickles (lonche) and for dishes where you want a sharp, pungent edge. Many cooks heat mustard oil until it just starts to smoke and then let it cool before using it, which softens the sharpness.

What to expect from a wood-pressed oil

Oil pressed slowly in a wooden ghana is usually filtered rather than refined, so it keeps more of the seed's own smell and colour than a supermarket refined oil. A thin layer of sediment may settle at the bottom of the bottle — that is normal. Pour gently if you want it clear.

Weight, not volume

This oil is sold by weight. Oil is lighter than water, so 1000 g is about 1.08–1.1 litres — useful to know when you compare it with oils sold in ml.

Storage

Keep the lid closed and store the bottle away from the stove and direct sunlight.
