What to use it for

In many Maharashtrian homes, saindhav is the salt used on upvas days — Navratri, Ekadashi, Mahashivratri — in place of regular salt. Use it in sabudana khichdi, sabudana vada, upvasachi batata bhaji, shengdana amti, varai bhaat and on curd or fruit. Plenty of cooks also like it in raita, chaas and chaat.

Good to know

Rock salt is generally not iodised, so most households keep it for fasting and specific recipes and use iodised salt for everyday cooking.

Storage

Keep in a dry, airtight jar and use a dry spoon — salt absorbs moisture and can form lumps in the monsoon.
