    Wood-pressed coconut oil (khobrel tel) in a 500 ml bottle, made by Durgadevi SHG in Pune district.

    What to use it for

    Coconut oil is the everyday cooking oil of the Konkan coast — for fish curry, solkadhi tadka, vegetable sukke and coconut-based usal. It has a clear coconut aroma, so use it where that flavour belongs.

    What to expect

    Coconut oil turns solid and white when the room is cooler than about 24°C. This is normal and doesn't mean the oil has gone bad — stand the bottle in a bowl of warm water for a few minutes and it will melt again. Wood-pressed (lakdi ghana) oil is filtered rather than refined, so a little sediment is also normal.

    Storage

    Keep the cap tight, store away from sunlight, and use a dry spoon so no water gets into the bottle.
